In the Middle Ages and the Renaissance, the “credence service” was a ritual in noble courts in which an official, known as a credenziere, tasted food and drink before they were served to the lords, to ensure they were safe. This ancient custom, known as “fare la credenza,” gave rise to a term that still evokes trust and the traditions of good dining today.
